El Paraiso P-02

El Paraíso P-02 “Red Plum” is an experimental Castillo coffee produced by Diego Samuel Bermúdez at Finca El Paraíso in Cauca, Colombia, grown at around 1,960 masl. Using the farm’s advanced bioprocess fermentation, including controlled anaerobic fermentation, selected cultures, thermal shock and carefully controlled drying, the process creates an exceptionally vibrant and fruit-driven cup. Expect intense notes of red plum, raspberry, cherry and tropical fruit, complemented by panela-like sweetness, bright juicy acidity and a silky body. It’s a distinctive, highly processed Colombian coffee designed to showcase remarkable fruit intensity and clarity.
