This lot features Chili Bourbon, a rare natural mutation of the Bourbon variety first discovered in Huila, named for its tiny, chili-shaped cherries and prized for its genetically complex, savory-sweet profile with distinctive spiced aromatics. Carefully hand-picked cherries undergo a meticulous 4–6 day anaerobic natural fermentation in sealed tanks to amplify fruit esters and spice, followed by a slow 15+ day greenhouse drying process that delivers exceptional clarity, balance, and stability in the cup, while Inmaculada’s Fellows Farms Project extends these elite processing standards to outstanding regional harvests.
